Tie Guan Yain is an Oolong from China. It is made in Fujian, a region known for its high tea production and mountains.
Oolong tea, which is a Chinese and Taiwanese tea, is made from the Camellia Sinensis plants. Green and Black teas are also made from the same plants.
Camellia Sinensis Oolong Tea is a slightly different variation. The tea leaves have serrated edges instead of straight edges.
Oolong is also different because of the amount of oxidation the loose tea leaves undergo. Green tea leaves, for instance, are not subject to any oxidation. Black tea leaves, however will go through full oxidation.
Oolong tea is unique because it’s somewhere in the middle. It goes through what is called “semioxidation”, which means that it will stop the oxidation process before full oxidation.
What makes tie guan yin so different from other Oolongs, you ask?
This Oolong is a popular Chinese Oolong tea. The leaves are rolled into small tea pellets in loose tea form. They have a greeny-brown color. The leaves will open up once they are brewed. If the quality is good enough, you can see the entire leaf. The serrated edges of the leaf should be noted.

Oolong teas have many different flavours. They will change as you infuse them. This is the great thing about loose tea. You don’t need to brew it once. It’s possible to keep going, which I highly recommend. Only then can you truly appreciate the flavors and taste everything you were meant to.
The legend behind the name “Iron Goddess of Mercy”.
The name of this tea is quite interesting! This tea was named after a monk who discovered a temple that had been abandoned hundreds of years earlier. There, he found a statue of Tie Guan Yin. It translated to Iron Goddess of Mercy.
The monk was upset at the state of the temple and spent his time cleaning it up. He returned every day to offer sacrifices to the statue.
One night Tie Guan Yiin dreamed that he had come to life and thanked the monk for his efforts. When the monk returned to the temple the next day, he saw a tea bush growing right where the statue was.
